I recently purchased a bag of Prewett’s Oatbran with the aim of adding more fibre to my diet. I’m a big lover of muffins but shop-bought ones are often full of sugar and not very filling. So I decided to use Prewett’s recipe for Oatbran yoghurt muffins, however I made some alterations to fit my dietary needs.
So the recipe including the swaps are
150g Plain Flour (I used wholemeal)
2 tsp baking powder
50g Prewett’s Oatbran
75g sugar (I used 40g ‘Half Spoon’)
125ml natural yoghurt
75ml vegetable oil
1 egg
70g chopped dried dates
