Ingredients
200g basmati rice
300ml cold water
1 can full fat coconut milk
2 cloves of garlic chopped
1/2 bunch spring onion sliced
1 tsp all spice
1 tsp dried thyme
1 can red kidney beans drained and rinsed
Method
Add all the ingredients except for the red kidney beans to a pan with the cold water and bring to a boil, once boiling reduce the heat and cook the rice for 10 minutes or until soft. Stir in the red kidney beans heat through for 2-3 minutes.
