1 bag Quorn Swedish-style meatballs
2 large carrots (spiralized)
1 390g carton chopped tomatoes (I used Sainsburys Taste The Difference with added extra virgin olive oil and basil)
2 tsp paprika
1 pack Sainsburys prepared roasted vegetables
1. Preheat oven to 200 degrees.
2. Empty vegetables on to a foil lined baking tray and cook for 20 mins, turning halfway through.
3. Heat a pan with 1 tbsp oil. Fry the meatballs on a medium heat for 5 mins.
4. Add the paprika and chopped tomatoes to the pan. Bring to the boil then simmer for 12-15 mins.
Serve with the spiralized carrots.
