Juvela Gluten Free Teabread

Ingredients

250g Mixed Fruit (Soaked in 350ml Hot black tea for 4 hours or overnight)

Juvela Gluten-Free White Mix

2 Tsp Coconut Sugar  (or other sweetener)

1 Tsp Cinnamon

1/2 Tsp Nutmeg

1 Tsp Salt

2 Tbsp Vegetable Oil

450ml Warm Water

 

Method

Preheat oven 220/425/Gas Mark 7

Combine the mix, yeast (it is included in the pack), salt and coconut sugar in a bowl and stir in the oil. Add the water and beat until a think smooth batter is formed. Don’t be afraid to add more water if needed. Add in the cinnamon, nutmeg and fruit and stir.

Half fill lightly greased loaf tines (mixture makes 2 loafs or 1 loaf and approx. 9 rolls in a greased muffin tin) or muffin tins if making rolls.

Smooth the surface and cover with a greased polythene bag. Leave in a warm place for 30 mins to prove. Carefully remove polythene bag and bake in a preheated oven oven for:

Loaves: 20-25 mins  Rolls: 10-15 mins.

Allow to cool in tins before finishing the cooling on a wire rack.
