Summer is here at last which means salad season for me. They are so quick, versatile and colourful to put together not to mention nutritious. The salad in the photo above is salad leaves, chorizo, reduced fat cheese, beetroot and topped with a low-calorie blue cheese dressing.
I love adding beetroot to my meals (even to homemade juices) as it’s such a nutritious food. Rich in nitrates, beetroot has long been championed as a healthy heart vegetable. Beetroot is also rich in iron and folate (naturally occurring folic acid), so it is a great pregnancy food too!
